NATURE OF THE GROUND
Eocene origin, ponca, clayey silt.
The harvest of this variety is done in two moments.
A first part is harvested early to preserve the more vegetal aromas, while the second takes place at full maturity to develop the most fruity aromas and increase the structure of the wine.
The bunches are first de-stemmed and then softly pressed to obtain the must which will remain in contact with the coarse lees.
After this process during which a daily battonage is carried out, the must is separated from the lees and is brought to temperature to proceed with fermentation.
This lasts at the end of which, the wine remains in contact with the noble lees until spring, when this is clarified, filtered and bottled.
After a short period of aging in the bottle, the wine is marketed.
