NATURE OF THE GROUND
Eocene origin, ponca, clayey silt.
A first mass is collected, subsequently de-stemmed and pressed, the monster obtained is clarified and cooled.
The next day the second mass is harvested, equal to about one third of the first, it is de-stemmed and the berries obtained are combined with the clarified must of the previous day.
Subsequently, after the addition of the yeast, the fermentation starts which lasts, the berries are stirred with the must every day until the end of fermentation, this operation gives us the particular nuances of this wine.
The wine is aged in steel barrels at the end of which it is clarified, filtered and bottled.
