Eocene origin, ponca, clayey silt.

VINIFICATION

A first mass is collected, subsequently de-stemmed and pressed, the monster obtained is clarified and cooled.
Then the second mass is collected, equal to about one third of the first, this is de-stemmed and the berries obtained are combined with the clarified must.
Subsequently, after the addition of the yeast, the fermentation starts and the berries are mixed with the must every day until the end of fermentation, this operation gives us the particular nuances of this wine.
The wine is aged in steel barrels and is finally clarified, filtered and bottled .
