NATURE OF THE GROUND
Eocene origin, ponca, clayey silt.
When fully ripe, the grapes are harvested during the coolest hours of the morning and are de-stemmed and softly pressed in the cellar.
At the end of this maturation phase the wine is clarified again, filtered and bottled.
Aged in the bottle before being released.
The most structured of the range, it impresses with volume and complexity.
It goes well with important first courses but also with white meats and fish-based second courses
